Ingredients:

700 gr. floor
warm water
5 gr. yeast
3 fresh tomatoes
• 2 onions
salt & pepper
olive oil

 

Preparation:

Sift the flour into a bowl. Dissolve the yeast and add it to the flour. Add a pinch of salt and then add the water little by little until the dough is pliable and no longer sticks to your hands. Allow the dough to rise for about 1 hour in the bowl.  Meanwhile, cut the tomatoes and onions into slices. Spread some olive oil on your baking tray. Roll out your pizza dough to the size of the tray, and then place it on the tray. Spread some olive oil on the dough, add the sliced tomatoes and onions and then salt and pepper. Set aside in a warm spot to rise again and bake at 180ºC for 50 minutes until the ladenia has just browned.

 

FRIED TOMATO BALLS (with sun-dried tomato)

Fried Tomato Balls

Ingredients:

floor
sun-dried tomatoes (chopped)
mint
• onion (chopped)
• active dry yeast
• warm water
• salt & pepper
• olive oil for frying

 

Preparation:

Leave the tomatoes in a bowl with some cold water for a few hours so that the water will draw the salt out of them. Place them on a paper towel, squeeze them gently to release the water and chop them. Chop the onion as well. Mix the yeast with the water until it is completely dissolved and add it into the bowl with the sifted flour. Then add the mint, the onion, salt and pepper and as much water as is needed until the mixture is firm enough to make into balls. Leave it to rise for about 1 hour. Preheat the oil in the pan and fry the dough.
